Campfire Cooking Is Great FunLast night my brother and sister-in-law called and asked me and my daughter to come over for a campfire cookout. What a fantastic time just sitting round the fire smelling mouth watering corn on the cob roasting, a few baked potatoes, and grilled chicken cooking while we laughed about each persons day.

Here in Northeastern Pennsylvania nothing is better than the first sweet corn of the season. Roasted fresh and hot right of the grill onto the plate.

And you can’t have a campfire without make S’mores.
I had the job of determining who roasted the best marshmellows.  Not an easy position for me to be in. Next comes the task of layering the marshmellow and chocolate bar between the graham crackers. What a mouth full of fun!

Camp CookingAfter a long day on the trail, the aroma of supper simmering on the campfire is almost heaven. We’d like to share a few of our family recipes for some easy camp cooking with our wonderful Camping Cookware. Sit back and enjoy!

          

                  BABY RED POTATOES

   Approx. 20 sm. red potatoes
   1 Pkt. dry Italian dressing
    olive oil

Cut and dice potatoes. Lay on large piece of foil. Drizzle with olive oil, and sprinkle with dressing. Close up foil tightly and toss well. Put on grill when you are ready. Cook until tender when poked with fork. Serves 6.

            

                                                         GRILLED VEGGIES

Red and Green Peppers
Yellow and Zucchini Squash
Onions
1 Lemon
Garlic Salt
Pepper

Slice peppers, yellow and zucchini squash, and onions. Lay on piece of foil. Cut lemon in half and drizzle over veggies. Sprinkle with Garlic Salt and Peper. Close foil and steam, or lay upon grill until soft.

                                                         CAMP STEW

1 lb of ground hamburg
1 large onion chopped
2 large cans Pork and Beans
1 tablespoon molasses
3 tablespoons butter or margarine
Salt and Pepper
touch of sage or poultry seasoning if you like

Saute onion in butter until clear. Add hamburg and brown. Add beans and spices and cook approx. 2o minutes. Serve hot. Serves 6 large portions.
